LLLC Cooking Club: Coconut Fish and Tomato Bake
This month Guest Chef Angela will teach us to prepare a Nigerian dish called Coconut Fish and Tomato Bake. A fish dish like this would have traveled to the Americas and Islands with captured African slaves. The enslaved used local white fish, herbs, and available vegetables. We’ll be using ginger, turmeric, red pepper flakes and coconut milk.
The Menu: Coconut Fish and Tomato Bake, rice, beans, and salad. $30
